semolina cake recipe | eggless rava cake recipe | coconut orange semolina cake with step by step photo and video recipe. this cake is also known as basbousa or harrisa semolina cake in middle eastern and north african countries. it is a favourite dessert, but they pour sugar cinnamon syrup over the cake before serving.
this cake does not require to spread any icing over it. you can enjoy the cake as it is. adding honey and white chocolate is completely optional. to make semolina vanilla cake, replace orange zest with vanilla essence and orange juice with milk.
you can also prepare this cake in a pressure cooker. for that first of all, you need to remove whistle and gasket / ring from the pressure cooker. then pre-heat the cooker on a medium flame for 10 minutes. place a small stand or a small bowl in the cooker and place cake tin over it. close the lid and cook on a medium flame for around 35-40 minutes. you can check the cake by inserting tooth-pick in it.

- ¾ cup fine semoilna
- ¼ cup all purpose flour (maida)
- 3 tbsp desiccated coconut
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ cup yoghurt
- ¼ cup orderless oil
- ½ cup powdered sugar
- 1 tbsp honey (optional)
- 1 tsp orange zest
- 3-4 tbsp fresh orange juice
- 1 tbsp tutti frutti
- 4-5 cashew nuts, cut in halves
- for dry ingredients, mix all the ingredients in a mixing bowl.
- for dry ingredients, mix yoghurt and oil in a bowl.
- beat this mixture well for 2-3 minutes.
- now add powdered sugar and again beat for 2-3 minutes.
- then add honey, orange zest and mix well.
- keep adding dry ingredients gradually and keep mixing.
- add orange juice as required to get pouring consistency batter. the batter will be little thin than the normal cake batter as semolina will absorb water.
- grease and dust cake tin.
- pour in the cake mixture.
- sprinkle some tutti frutti and cashew nuts over it.
- bake in a pre-heat oven at 160 degrees for 30-35 minutes.
- remove from the oven and let it stand for 10 minutes as it is. now unmould the cake and put it on a wire rack to cool down completely. the cake is extremely delicate and soft, so handle very carefully while turning.
