lapsi recipe | fada lapsi | fada ni lapsee | gujarati broken wheat dessert - very traditional gujarati sweet made using dalia or broken wheat

Ingredients (1 cup = 250 ml)
  • ¼ cup ghee
  • 2 cinnamon sticks
  • 2 cloves
  • 2 cardamoms
  • ½ cup fada/broken wheat
  • 2 cups water
  • 1 tbsp raisins
  • 1 tbsp almonds, roughly chopped
  • 1 tsp cashew nuts, roughly chopped
for sugar syrup:
  • ½ cup sugar
  • ¼ cup water
  • 1 tbsp almonds & cashew nuts, roughly chopped
  • 5-6 saffron strands
  • 1 tsp cardamom powder
  • 1 tsp ghee
to garnish:
  • 2 tsp pistachio flakes
  • 2 tsp desiccated coconut
  1. heat ghee in a pressure cooker and add cinnamon sticks, cloves and cardamoms.
  2. once they crackle, add broken wheat and saute on a medium flame till they turn light pinkish.
  3. next add raisins and roughly chopped almonds. & cashew nuts.
  4. mix well and lightly roast for 30 seconds.
  5. then add water and mix well.
  6. close the lid and pressure cook for 3 whistles.
for sugar syrup:
  1. in an another pan, add sugar and water.
  2. mix well and bring it to a boil.
  3. then add chopped almonds, pistachio flakes, saffron and cardamom powder and mix well.
  4. add fada mixture to it and spread on a very low flame.
  5. bring the mixture to a boil.
  6. once you see bubbles forming on the top, cover and cook till all the water is absorbed. cook on a very low flame.
  7. stir occasionally.
  8. now add a tea spoon of ghee and cook for a minute.
  9. finally garnish it with pistachio flakes and desiccated coconut. serve fada lapse hot with lunch or dinner.
Helpful Tips
- i have grind broken wheat for one pulse in a mixer grinder to make it little small.

- add sugar more or less according to your taste.

- make sure you pressure cook broken mixture on a medium flame.

- add little less water if you want each grain to be separated.

- after adding fada mixture to the sugar syrup, cook lapsi on a very low flame.
