Ingredients (1 cup = 250 ml)
  • 2 cups all purpose flour/ maida
  • 2 tbsp rava/sooji
  • 1 tsp carom seeds
  • ½ tsp crushed black pepper
  • salt to taste
  • 2 tbsp chilli oil (chilli flakes soaked in oil & drained)
  • oil to deep fry
other ingredients:
  • 1 tbsp ghee
  • 2 tbsp rice flour
  • 6-7 cloves/lavang
spice masala mix:
  • chat masala + red chilli powder
Instructions
mathri dough recipe
  1. first of all, take a mixing bowl and add all purpose flour and wheat flour to it.
  2. next add sooji, carom seeds, black pepper, salt to taste and chilli oil.
  3. crumble well.
  4. then add water as required to make medium stiff dough.
  5. cover it with a damp cloth and let it rest for 10 minutes.
  6. now knead the dough well and divide it into 3 equal parts.
method 1:
  1. take one dough ball and divide it into 6-7 equal sized balls.
  2. then take and press and flatten a bit.
  3. then dust it with a dry flour and roll it into medium thick round circle.
  4. apply ghee over it.
  5. then sprinkle some rice flour & prepared spice mix to it.
  6. then fold it to make half circle shape.
  7. again apply some ghee & sprinkle rice flour and spice mix to it.
  8. fold to make a triangle.
  9. gently press a clove at the bottom as shown in the pic.
  10. prink all the triangle mathri so they do not puff.
  11. now deep fry mathri on a low flame.
  12. stir occasionally.
  13. fry till they turn golden brown and crispy.
method 2:
  1. take another dough ball and divide it into 3 equal parts.
  2. take one dough ball, and press to flatten.
  3. dust with dry flour and roll into medium thick chapatti.similarly, roll the other 2 dough balls into chapatti.
  4. now take chapatti and apply ghee over it.
  5. sprinkle some rice flour & spice mix over it.
  6. place another chapatti over it.
  7. again apply some ghee, sprinkle some rice flour & spice mix over it.
  8. place the last chapatti over it and repeat the process.
  9. gently roll the chapati as shown in the pic. seal the edges by applying some ghee at the edges.
  10. cut into circles.
  11. take one and flatten.
  12. dust with dry flour and roll into small puri. repeat the process with the remaining.
  13. now deep fry on a low flame, stir occasionally.
  14. fry till they turn golden and crispy.
method 3:
  1. take the dough and divide it into 6-7 equal parts.
  2. take one and roll it into a medium thick mathri.
  3. prick them all.
  4. deep fry on a low flame till golden and crispy.
  5. finally, sprinkle some spice mix on top and namkeen mathri are ready. you can store them in an air tight container for almost 15 days.
Helpful Tips
- you can use only all purpose flour instead of using wheat flour.

- add spices according to your taste.

- deep fry mathri on a very low flame or else they will not be crispy.

- these masala mathri can be stored in an air tight container for almost 15 days.
