Ingredients (1 cup = 250 ml)
  • ¾ cup sugar
  • ⅓ cup water
  • ½ cup cashew nuts powder
  • 1 cup melted hot ghee
  • ½ tsp cardamom powder
  1. first of all add sugar and water to the pan.
  2. bring it to a boil and keep stirring occasionally.
  3. let it boil on a medium flame till we get 3 string thick consistency sugar syrup.
  4. now add cashew nuts powder.
  5. mix well to make a lump free mixture.
  6. lightly roast for 30 seconds on a low flame.
  7. next add melted hot ghee in batches. add some ghee and mix well in one direction till the ghee is absorbed.
  8. now similarly keep adding little little ghee and mix well.
  9. keep stirring continuously in one direction on a low flame.
  10. once the mixture turns fluffy and you can see fine texture, turn off the flame.
  11. add cardamom powder and mix well.
  12. transfer cashew mysore pak in a container. do not use anything to make the surface flat, let it set on its own.
  13. after it cools down make desired size pieces.
  14. turn the container upside down and the kaju mesub pieces will come out easily.
  15. you can store this kaju mysore pak for 8-10 days.
Helpful Tips
- make thick 3 string consistency sugar syrup. this will speed up the process and you will have to stir less compare to 1 string sugar syrup.

- the ideal measurement for cashew mysore pak is 100 gms cashew nuts powder, half cup water, 200 gms sugar and 300 gms ghee. you can increase or decrease the measurement according to the quantity you want to make. generally i follow this measurement.

- while making mysore pak, keep the flame on a medium to low.

- to get the best result, keep stirring mesub in one direction only.
