Ingredients (1 cup = 250 ml)
for dal mixture:
  • 1 cup whole urad dal (sabut urad da)
  • ½ cup bengal gram (chana dal)
  • 1 small piece ginger, grated
  • ½ tsp asafoetida/hing
  • 2 tsp oil
  • 4 cups of water
for tempering:
  • 1 tbsp ghee/ clarified butter
  • 1 tbsp oil
  • 1 tsp cumin seeds/jeera
  • 1 medium sized onion, finely chopped
  • 3-4 green chillies, slit
  • 1 tbsp ginger garlic, finely chopped
  • 1 medium sized tomato, finely chopped
  • ½ tsp turmeric pwoder
  • 1 tbsp roasted coriander powder
  • ½ tsp garam masala
  • 1 tsp red chilli powder
  • salt to taste
for dal mixture:
  1. take both the dal in a pressure cooker and wash 2-3 times.
  2. then add water, grated ginger, hing and oil.
  3. pressure cook on a high flame for 2 whistles and then on simmer till the dal is cooked properly.
  4. after the pressure releases, immediately open the lid and mix well so the dal turns mushy.
  5. transfer dal in a pan and add ¼ cup of water.
  6. mix well. cover and let it simmer till the tempering is ready.
for tempering:
  1. first of all, heat ghee and oil in a pan.
  2. next add cumin seeds and let it sputter.
  3. next add finely chopped onions and saute till they turn golden brown.
  4. further add slit green chillies and finely chopped ginger garlic.
  5. saute till the raw smell disappears.
  6. then add finely chopped tomato and cook till tomatoes turns mushy.
  7. now add turmeric powder, roasted coriander powder, garam masala, red chilli powder and salt to taste
  8. and 2-3 tbsp of water. mix well and saute till oil leaves the pan.
  9. now add this tempering to the dal mixture along with 2-3 tbsp of water.
  10. mix well.
  11. cover and let it simmer for 4-5 minutes.
  12. stir occasionally.
  13. finally, serve langarwali dal with naan, roti or rice.
