Ingredients (1 cup = 250 ml)
for tandoori masala recipe:
  • 3 cloves
  • 1 inch cinnamon stick
  • 1 black cardamom
  • 2 green cardamom
  • 1 mace (javantri)
  • ½ tsp nutmeg (jaayphal)
  • ½ tsp fennel seeds
  • ¼ tsp fenugreek seeds
  • 1 tsp dry ginger powder
  • ½ tsp black pepper powder
  • 1 tsp coriander cumin powder
  • 1 tbsp red chilli powder
  • ½ tsp turmeric powder
  • 1 tbsp kasuri methi
  1. for tandoori masala recipe:
  2. first of all take a mixer jar and add cloves, cinnamon stick, mace, fennel seeds, fenugreek seeds, black cardamom, green cardamom and kasuri methi.
  3. grind to a smooth powder
  4. further add ginger powder, black pepper powder, nutmeg powder, coriander cumin power, red chilli powder and turmeric powder.
  5. grind to make a fine powder.
  6. store in an air tight container for a month.
Helpful Tips
- you can ½ tsp of carom seeds/ajwain if you want.

- you can even use whole coriander seeds, cumin seeds, black pepper and dry roast them lightly and then grind to a smooth powder.

- you can store this homemade tandoori spice mix for a month if not roasted, and if roasted you can store it for almost 6 months.
