Ingredients (1 cup = 250 ml)
  • 2 tsp oil
  • 1 tbsp ginger, finely chopped
  • 1 tbsp garlic, finely chopped
  • 1 green chilli, finely chopped
  • 1 tbsp carrot, grated
  • 1 tbsp cauliflower, grated
  • 1 tbsp tomatoes, finely chopped
  • 1 tbsp capsicum, finely chopped
  • 2 tbsp spring onion whites, chopped
  • 2 tsp tomato sauce
  • 1-2 tsp red chilli sauce
  • 2 tsp dark soy sauce
  • ½ tsp black pepper powder
  • salt to taste
  • 2 cups vegetable stock
  • 7-8 mint/phudina leaves, chopped
  • 1 tbsp coriander leaves, finely chopped
  • ¼ cup cornflour paste )2 tsp cornflour + ¼ cup water)
  • 1 tbsp spring onion greens
  • 1 tbsp vinegar
  • fried noodles to serve
  1. first of all, take a sauce pan and heat the oil.
  2. then add finely chopped ginger, garlic and green chilli.
  3. saute till they turn golden brown.
  4. further add grated carrots and cauliflower.
  5. then add finely chopped tomatoes, capsicum and spring onion whites.
  6. saute on high flame for a minute.
  7. next add tomato sauce, red chilli sauce, soy sauce, black pepper powder and salt to taste.
  8. mix well.
  9. now add vegetable stock and finely chopped mint leaves & coriander leaves.
  10. stir once.
  11. bring the mixture to a boil.
  12. now add corn flour paste and mix well.
  13. stir occasionally and cook till the soup thickens.
  14. turn off the flame and add spring onion greens and vinegar.
  15. mix well.
  16. serve the soup hot topped with fried noodles.
Helpful Tips
- you can add vegetables like cabbage and mushrooms.

- you can use home made vegetable stock , plain water or ready made vegetable stock cube.

- adjust sauces according to your taste.

- finally, serve chinese veg manchow soup hot with lots of fried noodles.
