Ingredients (1 cup = 250 ml)
  • 1 bowl rice (1 cup soaked)
  • 1 tbsp oil
  • 1 bay leaf (tej patta/tamalpatra)
  • 2 cloves (lavang)
  • 1 piece cinnamon (dal chini / taj)
  • 1 whole dry red chilli
  • 1 green chilly, chopped
  • ½ tsp cumin seeds (jeera)
  • 4-5 black pepper corns (kali mirch/mari)
  • 1 cup blanched carrots
  • ½ cup coriander leaves, chopped
  • 1 tsp biryani masala
  • ½ tsp cardamom powder (elaichi)
  • salt to taste
  • 8-10 mint leaves, chopped (phudina)
  • few fried cashew nuts to garnish
  1. first of all, heat oil/ghee in a pan.
  2. then add bay leaf, cinnamon stick, cloves, whole red kashmiri red chilli, black peppers and cumin seeds.
  3. once they sputter, add green chilli and sauté for few seconds.
  4. next add in blanched carrots, coriander leaves and boiled rice.
  5. then add biryani masala, cardamom powder, salt to taste and chopped mint leaves.
  6. mix well.
  7. let the rice cook for 2 minutes.
  8. garnish with chopped coriander and fried cashew nuts and serve hot.
Helpful Tips
- you can replace biryani masala with garam masala.

- adjust spices and quantity of carrots and coriander according to your taste.

- suits best with leftover rice as well.
