nawabi aloo recipe | how to make nawabi aloo | shahi aloo recipe - a royal curry of potatoes simmered in tomato based gravy.

Ingredients (1 cup = 250 ml)
for shallow frying potatoes:
  • 3 tbsp oil
  • 8-10 baby potatoes
for nawabi aloo recipe:
  • 1 tbsp oil
  • 1 tsp ghee
  • 3 cardamoms
  • 1 small piece cinnamon stick
  • 1 onion, chopped
  • 2 tsp ginger-garlic paste
  • 4 tomatoes (pureed)
  • 1 tsp red chilli powder
  • salt to taste
  • 1 tsp garam masala
  • 2 tbsp cashew nut-poppy seeds paste (1 tbsp cashew nuts + 1 tsp khas khas + 1 tbsp milk)
  • 2 tbsp water + 2 tbsp water
  • 1 tbsp cream
  • 1 tbsp chopped dry fruits (cashew nuts / almonds / pistachios)
for shallow frying potatoes:
  1. heat the oil in a pan.
  2. shallow fry potatoes on high flame till they turn golden in colour.
  3. transfer in a plate and keep aside.
for nawabi aloo recipe:
  1. take a cooker and heat the oil and ghee.
  2. add cardamoms, cinnamon stick and chopped onion.
  3. saute till it turns light brown.
  4. then add ginger-garlic paste and saute till the water dries up.
  5. next add pureed tomatoes and let it cook till the wate dries up.
  6. further add red chilli powder, salt to taste, garam masala and cashew nuts poppy seeds paste.
  7. mix well, add 2 tbsp water & cook on high flame till water dries up.
  8. further add fried potatoes, 2 tbsp water and mix well.
  9. close the lid and cook for 2 whistle.
  10. open the lid, add cream to it and mix well.
  11. sprinkle chopped dry fruits over it. serve hot with garlic naan or rogan roti or tandoori roti.
