Ingredients (1 cup = 250 ml)
for locho masala:
  • 2 tsp roasted cumin powder
  • 1½ tsp kashmiri red chilli powder
  • ½ tsp black pepper powder
  • ½ tsp rock salt
  • a pinch of salt
for surati locho recipe:
  • 1 cup chana dal
  • 1 tbsp gram flour / besan
  • 1 tbsp ginger chilli paste
  • salt to taste
  • ¼ tsp turmeric powder
  • 1 tsp oil
  • water as required
  • ¼ tsp fruit salt
to serve:
  • oil
  • fried green chillies
  • sev
  • chopped onions
  • chopped coriander leaves
  • farsan chutney
for locho masala:
  1. take a small bowl and add roasted cumin seeds powder, kashmiri red chilli powder, black pepper powder, rock salt and a pinch of salt.
  2. mix well and keep aside.
for surati locho recipe:
  1. take chana dal in a bowl.
  2. add 2 cups of water and soak dal for around 3-4 hours.
  3. now remove excess water from the dal.
  4. grind it to a smooth paste.
  5. now take the paste in a bowl and add gram flour and salt.
  6. mix well, mix continuously in one direction for 4-5 minutes.
  7. the mixture will become lighter and fluffy.
  8. cover and keep in a warm place for 5-6 hours to ferment.
  9. once the mixture is fermented it would be little lighter.
  10. further add ginger chilli paste, salt to taste and turmeric powder.
  11. mix well.
  12. add water as required to make pouring consistency batter.
  13. now add oil and fruit salt.
  14. again mix in one direction for a minute.
  15. now steam the steamer and grease the plate.
  16. pour batter over the greased plate.
  17. cover and cook for 8-10 minutes. it should be lightly cooked & not hard like khaman.
  18. take locho in a serving plate and pour oil over it.
  19. sprinkle some prepared masala, sev, 1 tsp oil and finely chopped onions.
  20. sprinkle some more masala and some prepared masala.
  21. serve it with some extra sev sprinkled with some masala, fried green chillies and farsan chutney.
Helpful Tips
- fermentation of the mixture might take little longer time if its cold season. it will ferment quickly in summers.

- if the mixture is cemented and you do not want to use it immediately, you can keep the mixture in refrigerator till require.

- add locho masala generously to get the authentic taste to surti locho.
