Ingredients (1 cup = 250 ml)
for chana batata stuffing recipe:
  • 1 cup black chana, boiled
  • 2 potatoes, boiled
  • 1 tsp red chilli powder
  • 2 tsp coriander cumin powder
  • salt to taste
  • 1 tbsp coriander leaves, finely chopped
for pani recipe:
  • 10 - 12 mint leaves / phudina
  • 12-15 coriander springs, dhaniya
  • 3-4 green chillies, spicy
  • 1 inch ginger
  • ¼ cup water + 4 cups water
  • 1 tsp black pepper powder
  • 1 tsp chat masala
  • 1 tsp roasted cumin seeds powder
  • 1 tsp amchur powder / dry mango powder
  • ½ tsp rock salt
  • salt to taste
  • 2 tsp sugar (optional)
to assemble the pani puri:
  • 30 puris
  • 1 cup tamarind dates chutney
  • 1 cup ragda, piping hot
  • 1 small onion, finely chopped (optional)
  • 1 tbsp boondi (optional)
for chana batata stuffing recipe:
  1. in a mixing bowl, add chana and potatoes, lightly mash them.
  2. now add coriander cumin powder, red chilli powder, salt, coriander leaves.
  3. mix well all the ingredients and keep aside.
for pani recipe:
  1. first we need to make a paste. for that take mint and coriander leaves in a mixer jar.
  2. then add green chillies, ginger and water.
  3. blend to make a smooth paste.
  4. now transfer the mixture in a big vessel.
  5. add black pepper powder, chat masala, roasted cumin seeds powder, amchur powder, rock salt, salt to taste and mix well.
  6. now add sugar and mix well, which optional, but it gives exact same thela wala pani tatse and the pani is ready.
to assemble the pani puri:
  1. first of all, crack a puri using your thumb.
  2. add prepared chana batata stuffing in it.
  3. add tamarind chutney to taste and finally fill it with pani, or you can add piping hot ragda, fill it with pani and serve immediately.
Helpful Tips
- add spicy green chillies according to your taste.

- pani tastes great when served chilled, so make pani in the afternoon and refrigerate it, if your are planning to make pani puri for dinner or add few ice cubes before serving.

- you can replace amchur powder with lemon juice or tamarind paste.

- along with chana batata stuffing, you can use sprouted mung beans while serving pani puri.

- serve pani puri immediately after assembling it , else it will turn soggy.
