Ingredients (1 cup = 250 ml)
for dry mix:
  • ¾ cup fine semoilna
  • ¼ cup all purpose flour (maida)
  • 3 tbsp desiccated coconut
  • ½ tsp baking powder
  • ¼ tsp baking soda
for wet mix:
  • ¼ cup yoghurt
  • ¼ cup orderless oil
  • ½ cup powdered sugar
  • 1 tbsp honey (optional)
  • 1 tsp orange zest
  • 3-4 tbsp fresh orange juice
  • 1 tbsp tutti frutti
  • 4-5 cashew nuts, cut in halves
Instructions
  1. for dry ingredients, mix all the ingredients in a mixing bowl.
  2. for dry ingredients, mix yoghurt and oil in a bowl.
  3. beat this mixture well for 2-3 minutes.
  4. now add powdered sugar and again beat for 2-3 minutes.
  5. then add honey, orange zest and mix well.
  6. keep adding dry ingredients gradually and keep mixing.
  7. add orange juice as required to get pouring consistency batter. the batter will be little thin than the normal cake batter as semolina will absorb water.
  8. grease and dust cake tin.
  9. pour in the cake mixture.
  10. sprinkle some tutti frutti and cashew nuts over it.
  11. bake in a pre-heat oven at 160 degrees for 30-35 minutes.
  12. remove from the oven and let it stand for 10 minutes as it is. now unmould the cake and put it on a wire rack to cool down completely. the cake is extremely delicate and soft, so handle very carefully while turning.
  13. cut into pieces and coconut orange semolina cake recipe is ready to serve.
Helpful Tips
- to make vanilla semolina cake, replace orange zest with vanilla essence and orange juice with milk.

- use fine semolina to make the cake, you can grind coarse semolina and use that if you don't have fine semolina.

- all ingredients used in the recipe are at room temperature.

- beat the oil and curd mixture till it gets light and fluffy.

- the cake is extremely delicate and soft, so handle very carefully while turning.

- to make the cake in a pressure cooker, remove whistle and gasket ,put small stand or bowl inside, pre-heat the cooker for 10 minutes, and put the cake tin in it. cook on a medium flame for 35 minutes.
